Bacon Caramel Apple Crisp
Instructions
Cook the 8 strips of bacon in the 12-inch Dutch oven till crisp.Remove bacon and place it on a paper towel lined plate. Place 2 teaspoons of the bacon grease into a small Dutch oven and leave the remaining grease in the 12-inch oven.
Streusel Topping:
In a large bowl, place all the dry streusel topping ingredients.Cut the butter into the dry ingredients using a pastry blender.Crumble 4 strips of bacon and mix them in the streusel topping.
Apples:
Peel, core and chop the 6 apples and place them into the 12-inch Dutch oven. Toss with lemon juice and bacon grease. Add light brown sugar, cinnamon and ginger. Toss to coat thoroughly.
Caramel Sauce:
Place the unwrapped caramels into the small Dutch oven with the 2 teaspoons of bacon grease. Let them melt. Then add the 2 tablespoons of heavy whipping cream and mix until thoroughly combined.
Pour 2/3 of the caramel sauce over the apples and sprinkle the streusel topping evenly over the apples. Bake at 350 degrees (8 coals under the Dutch oven and 17 coals on the top of the oven) for 30 minutes. Before serving, drizzle with the remaining caramel sauce. Crumble the 4 remaining bacon slices and sprinkle over the top.

6 Granny Smith apples
1T lemon juice
½ cup light brown sugar
2 t ground cinnamon
½ t ginger
Pinch of salt
Reserved bacon grease
Streusel Topping
1 ½ cup quick oats
¼ cup all-purpose flour
½ cup light brown sugar
1 t ground cinnamon
6 T cold salted butter
4 slices of bacon, crumbled
Caramel Sauce
36 individual wrapped
caramels, unwrapped
2 t heavy cream
2 t bacon grease
